Pluot and Saratoga Bay Leaf was made in collaboration with June Taylor, a Berkeley-based jam-maker who has dedicated her life to the art of preserving. It begins with garnet-colored Flavor King pluots from Blossom Bluff Orchard, picked at the beginning of their season as June prefers early-harvest fruit. We left the skins on in our puree for brightness and tang, supplementing the fruit's mild flavor with fresh-squeezed orange juice and zest. Saratoga Bay Laurel is an aromatic compliment, more complex than Meditteranean Bay with a delicate vanilla flavor. We steeped the leaves in the fruit along with warming Madagascar vanilla bean.
