Tomato Basil

Our journey to Italy for our Datterini Gialli tomato and basil Delight started at our neighborhood deli, Aurora Alimentari in San Francisco. Owner Dario Barbone curates some of the best imported Italian pantry products available, including cans of miniature yellow tomatoes called Datterini Gialli, a sun-grown variety farmed during the summer months in Campania. They’re notably sweet and uniform, with a fruity aroma, and a firm, fleshy mouthfeel. 

Back at the Rose kitchen, we wanted to highlight the golden hour flavor of late summer produce, so we blended the canned Datterinis into a rich puree with fresh Clementina Cherry and Gold Nova Cherry tomatoes from Full Belly Farm. We cooked the mixture low and slow into a fragrant, fruity jam, hitting it with some cold tomato puree at the end for the freshest flavor. Fresh basil risks oxidization, so we went with a homemade basil salt, pulverizing the leaves with a handful of Trapanisale sea salt and leaving the mixture to dehydrate. The result was a glittering, neon-green crackle that added a bright, savory zip to each Delight. These have a pulpy, transparent flavor that really highlights the bright fruitiness of a sun-ripened tomato, with a crystalline, basil-scented finish.
